Hi everyone!!!
I’ve not been around for awhile, that’s what happens when you go to France to make a record ( January 08) get back, help open and become exec pastry chef of a new restaurant, a gastropub actually, but more about that later.
Some new literature pastry wise is about and I thought people might want to check it out.

have to admit to a bit of an obsession lately with all things “P.H.”
It kicked back up with a look at this Japanese P.H. website…

The ” Mosiac” set of desserts particularly interested me, which led
me to this new ( for me) discovery of a blog by a pastry chef and fan at
Sweet Napa.
This incredibly detailed report with pictures blew my mind!
