Sorbet syrup

2000g water
180g granulated sugar
16g sorbet stabilizer
800g granulated sugar
220g atomised glucose

Place water and first sugar in a stainless steel pot and bring to a simmer. Combine second sugar, stabalizer and atomised glucose. Whisk into water/sugar combination. Bring to a boil and strain. Cool and let mature 24 hours.
