What’s in your toolbox?

it’s funny, 12 years ago I had three toolboxes that I kept in the kitchen. Then I went to a rolling craftsman unit like you find in a auto repair shop. I had alot of tools for pastry work. But it got too crazy, I mean, who needs an offset spatula in every available size? I thought I did. I’ve certainly whittled it down now.

Here’s what I bring along now:

Now, I know it’s a little jumbled in there.
I need to rearrange a bit. What’s in it? Well….

Top shelf:
plastic bowl scraper 3 or 4 (can’t live without it!)
mini torch
sharpie’s !
calculator
peltex
can opener
scissors
bench scraper
small paint brushes
steel paint scraper
measuring spoons!
church key, wine opener!

middle shelf:
sugar thermometer
4 off set spatula’s (different sizes)
instant read thermometer
rubber spatula
woodgrain tool
small ball scoop (2)

bottom shelf:
metal whisks (different sizes)
tea strainers (3-different sizes)
microplanes (ribbon and fine)
larger paint brushes
small ladles
service spoons!!!

You’ll notice that there aren’t any knives in there. I usually use three… a japanese 8 inch chef’s knife for fine work, an 8 inch heavier wusthof for chopping and a small pairing for all kinds of things. They live in a different container. Too much chance of their losing an edge with all that stuff in there. And contrary to popular belief about pastry paople, my knives are sharp. And I take pride in keeping them that way.

Don’t mess with my service spoons! Those who’ve worked with me know I like them to be right where I left them. I can’t get by without them.


Now this only accounts for the tools I’d use in a restaurant-type situation. If I’m doing chocolate or sugar work, I’d bring a bit more. One day I’ll describe that stuff to you!
